Sometimes, our enthusiasm gets the better of us and those new recipes prove to be too hard or full of too many unfamiliar ingredients. If this happens to you, give yourself a break, but don’t leave the kitchen! Go back to the tried and true recipes that your family loves and put a healthier spin on them by changing out a few ingredients.

A staple in my sister’s household is fried chicken coated with potato chips. Some recipes call for buttery crackers or crunchy, sweet cereal, but the premise is the same: coat chicken with a salty, crackly topping and bake. I’ve found myself wondering if a healthier alternative exists to the potato chip coating my niece and nephew love.

popchips Chicken ingredients

  • 1 lb. chicken tenders
  • 1 cup low-fat buttermilk
  • 2 cups Popchips crushed (my favorites are barbeque, plain or cheddar Popchips)
  • 1 tablespoon extra virgin olive oil
  • 1/4 cup grated parmesan cheese
  • 1 non-stick spray

directions to make the new “fried” Chicken recipe

Step 1

Place chicken and buttermilk in a bowl to marinate. Allow it to sit in the refrigerator for at least 30 minutes.

Step 2

Preheat oven to 400 degrees.

Step 3

Add Popchips to a plastic sealable bag and crush the chips into small pieces.

Step 4

Put crushed Popchips and olive oil in a saucepan over medium heat. Stir the chips until toasted.

Step 5

Remove from the pan and once cooled slightly, add the parmesan cheese.

Step 6

Drain the chicken, discard the buttermilk and dredge the chicken into Popchips crumbs.

Step 7

Place a baking rack on a sheet pan and spray with non-stick spray.

Step 8

Lay the chicken in a single layer on a rack and bake in the preheated oven for 25 minutes or until the outside is crispy and the chicken is done.

Step 9

Serve as is or with your favorite dipping sauce.
